Mini Meatballs

Another use for ground beef is mini meatballs. Mini meatballs are just another good reason to fall in love with ground beef. Kids love these little meatballs and so do adults and you can add them to just about anything to make it taste better, different or to stretch some dishes a bit and get some protein added to them.

Now this ground beef recipe is so easy you can get your kids to help if you want to. My girlfriends grand daughter who is 12 loves to make these meatballs but they can be a little tough for small kids because of the motor skills it takes to roll them out.

Ingredients.

1 small onion chopped fine.
Salt and pepper.
2# 80/20 ground beef or ground chuck.

Take two pounds of ground beef and put it in a bowl. I prefer to use the ground chuck at an 80/20 mix. 80 percent lean, 20% fat. I also prefer the ground chuck that comes in the rolls rather than the loose ground beef. The ground beef in the rolls seems to work better than the loose as it’s packed in to the rolls pretty tight so it has a better texture and is easier to work with.

Chop 1 small onion so it’s really fine. The finer you can get it chopped the better it will be and kids won’t have a fit about the onions. Add the chopped onion to the bowl with the ground beef. Add some salt and pepper to suit your taste and mix it all up some the onions are mixed in well.

After you have the ground beef and onion all mixed together you get the pleasure of rolling the meatballs. Lol, this part takes awhile so if you want to sit down and do it that’s cool. I do. Take a little ground beef and onion mix and roll it in your hand. Ideally they should be about the size of small marbles or a little bigger.

Being marginally lazy I take the bowl of ground beef and a cookie sheet and watch TV while I roll the meatballs. After you do it once you’ll see why, if the kids want to help roll them, how much easier and faster it is if the kids do it. ;)

When all are rolled put a pat of margerine in the bottom of the skillet and then cover the bottom of the skillet with the mini meatballs. Salt and pepper them and fry them until they are brown and completely cooked through.

When they are fully cooked you can put them in a colander and let the grease drain off, if there is any, and start the next batch frying. With a 12 inch frying pan you should get about 3 batches to cook up.

When they are all cooked you can save them for adding to macaroni and cheese, pork and beans, cabbage stew, canned spaghetti or spaghettio’s or anything else you want to add them to. My nephews like them with some BBQ sauce on hamburger buns.

If you want to freeze them for adding to something later, freeze them for about 30 minutes on a cookie sheet and then put them into freezer bags. Freezing the ground beef meatballs on the cookie sheet will keep them from sticking together and coming out in a clump.

There ya go, another simple quick and easy ground beef recipe that can be used with a lot of different things.
