Hamburger potato casserole

This hamburger potato casserole is very simple and only requires the cooking ability to brown the hamburger. I’m pretty sure if you are reading this you can probably handle it with no problem.

What it takes to make this hamburger potato casserole is

2# 80-85% lean hamburger meat.
2 cans Campbells cream of chicken soup.
4 cans milk. Whole milk is best but 2% will work just fine.
2 Medium onions.
Fresh potatoes.
Salt
Pepper

Cooking utensils needed.

Spatula
Large cooking spoon
Frying pan
5 quart pan with lid.
Sharp Knife

Take the 5 quart pan and cover the bottom with unpeeled potatos. Then add two more potatoes. That’s all the potatos you are going to use.

Peel the potatos and put them in a bowl of cold water after rinsing them off. You can let them sit until you have the ground beef and onion browned.

Peel the two onions and set one aside. Chop one of the onions into pieces and throw it into the frying pan. Add the two pounds of ground beef to the frying pan with the onion.

Using your spatula chope the ground beef up, in the frying pan, while it’s frying, until you have pieces about the ssize of a small marble. Add salt and pepper to taste. Don’t worry you won’t get it to salty.

Turn the oven on and set it to 350 degrees.

While the hamburger and onion is browning open the two cans of cream of chicken soup and put them into the 5 quart pan. Ad 4 soup cans of milk and turn the stove on medium heat. While the soup and milk is heating up, slice up the potatos into the milk and soup mixture. Stir it with the big spoon so it doesn’t stick to the bottom of the pan.

The potatoes shold be even sized slices about as thick as two credit cards. If the potatos are reall large, cut them in half, the long way, before you slice them up. If you have a potato slicer that will work just fine.

Don’t forget to keep strring the mixture now and then. When the hamburger and onion is well browned add it to the soup, milk and potatos and stir it well to mix it all up. Chop up the second onin and add it to the mixture.

Run your spatula or spoon over the top to push all the ingredients down. If they aren’t completely covered by the soup mixture add more mil until everything is covered but just barely covered. Don’t add to much milk or it will be way to thin.

Stir the onion in until everything is mixed well. When the mixture gets hot put the cover on the pot and place it in the oven for 45 minutes to one hour. After that length of time take it out of the oven, stir it all up well and put it back in the oven with the cover off. Leave it in the oven for another 30 minutes or so and it should be nice and brown on top, a lot thicker than when you started and ready to eat.

When the 30 minutes is up check the biggest piece of potato you can find an if it’s done then your hamburger potato casserole is ready to eat.

It goes very well with a lettuce salad. It also goes very well with grape, strawberry or raspberry jam sandwiches. Oh, an you’ll probably have to add more salt to it after you put it on your plate. I always have to because I always get scared about how much salt I’m adding when mixing the ingredients and browning the hamburger and onion.

If you want a different taste you can substitue a can of cheddar cheese soup. You can also use about any cream soup you like except tomato. I know people who make it wih cream of mushroom and cream of chicken or cream of onion if you can find it. Another thing you can do is put some cheese on top of it for the last 5 minutes in the oven.

It reheats very well in the microwave and the taste of it does not change. You can freeze the leftovers and put them right in the microwave and they’ll taste even better than they did the first time.

Do NOT try to use onion chips, onion flakes or any other type of powdered onion. It won’t taste the same. Do NOT use any soups but Campbells if you want it to taste the way it’s supposed to. You can after you’ve mastered it but then you’ll know how bad it gets if you try to use generic.
